Hi I am Pauline or sometimes Polly (..Bell)…and I am part of the Transition Town Horncastle group. I am assembling a cookbook for the Skills-sharing Day in Horncastle on October 2nd.
I would very much like to include your Favourite Vegan or Vegetarian recipe. In return for including your recipe, I would like to also include an idea from you on how we as a community can positively pull together in the face of Global Warming and Peak Oil.

Lentil Rissoles
1 1/2 cups Red Lentils (split)
1 Green Pepper
2 Garlic Cloves (chopped)
1 Red Onion (finely chopped)
1 tsp Garam Masala
2 tsp lemon juice
2 tbsp Unsalted Nuts (chopped)
2 1/2 cups Water
1 tbsp Plain Flour
4 tsp Turmeric
4 tbsp Veg Oil
Put lentils, pepper, garlic, onions, garam masala, lemon juice, nuts into saucepan with water, bring to boil and simmer for 30 mins or until liquid is absorbed. Leave to cool slightly, season with pepper then cool completely.
Form mixture into 8 rounds. Mix flour and turmeric together then coat rissoles with flour mixture on a plate. Heat oil in frying pan and cook in batches turning until golden brown. Serve with salad or vegetables of your choice.
Good Idea: If everyone ate just one meal a week throughout the whole year made of entirely locally produced products, what a world of difference this could make.
Hey there, I was reading your post and I just wanted to say thank you for putting out such excellent content. There is so much crap on the internet these days its hard to find anything worthwhile. I actually have cooked this recipe before, I got this book last month on recommendation from a friend http://ninjahq.com/go/cookingrecipes and it turned out really nice! I’m extremely eager to try your variation of it though, it looks excellent. I think you might enjoy those recipes, they’re very good. Thanks for the article and tips.
